In the April issue, we ran a guacamole recipe from Lotería Grill owner Jimmy Shaw. In the rush to get us the recipe and, you know, run his restaurants, Shaw inadvertently doubled the amount of onion in the recipe, a detail that caught reader A.J. Kind’s attention. Mr. Kind was thoughtful enough to provide us with this recipe of his own:

4 to 5 Hass or Fuerte avocados
3 slices of crispy bacon, finely chopped
1/4 onion, finely chopped
Salt to taste
Hot sauce to taste
Tomato and cilantro to taste (optional)

Make guacamole close to serving time to hold color.
