The Fairmont Miramar has transformed its stuffy restaurant into FIG, a bright breakfast nook of a spot serving seasonal California cuisine (emphasis on the word seasonal—the menu practically beats you over the head with it). Demi baguettes arrive with a green slab of spicy arugula butter; you’ll finish it all. A meal could be made of the “snacks” (warm baby romaine leaves with white anchovies), starters (braised beef tongue and tomato soup with mascarpone), cheese flights (curiously broken down into “progressive,” “local,” and “challenging”), salads (quinoa with chard and butternut squash), and sides (roasted cauliflower with hazelnuts). Entrées reemphasize the eco-angle, with sustainable seafood like John Dory and sablefish and California-raised meats such as Kurobuta pork and aged steaks served with drive-thru style frites.
