Thin strips of eggplant get a blanket of mozzarella in the eggplantmelanzane. Both spaghetti and clams are cooked to their prime in thespaghetti alle vongole, andrigatone alla bolognese packs a light punch. We love the simple tiramisu—if our mom were Italian, it would taste just like the one she used to make.
