Barman Matthew Biancaniello, inventor of new flavor profiles and creator of unusual cocktail ingredients, put omakase-style cocktail service on the map back when he worked at the Hollywood Roosevelt’s Library Bar, and next month he’s slated to do a 15-course “omakocktail” experience at Chaya Downtown with Miss Chiffonade’s Emily Han.
For one night only on January 24 at the restaurant’s Kaisen sushi bar, he’ll showcase his greatest hits — both liquid and edible cocktail variations — from just the past two years. Unfortunately, Biancaniello is still working on the menu, so no luck getting a peek of what to expect. “It’s a lot of prep and planning and staying open to many things. And I want to put everything into it,” he says.
So we can only cross our fingers that our personal favorites will make an appearance.

The Chaya event will have two seatings, 6:30 and 8:30 p.m, with only 12 spots per time slot. Tickets are $175 and available here.
