FIG, the farm-to-table restaurant inside the seaside Fairmont Miramar in Santa Monica, has Chef Ray Garcia to thank for its farm dinner series. Entering its fourth year, the series pairs the award-winning chef with his favorite farmers. It’s one of the best ways to enjoy SoCal’s summer bounty.
This week, on Wednesday, June 5, Garcia partners up with McGrath Family Farms to cook up a feast of local favorites, including a Zephyr Squash tart; Norwegian ocean trout, braised greens, baby broccoli, and petite onions; duck with forno beets; sweetbreads with fava beans and sauce gribiche; and for dessert, a strawberry tres leches cake, with white chocolate and coconut cream.
