Granted, no one will ever make fudge better than your granny did in her Sears double boiler. But we found the next best thing at Edelweiss Chocolates. Only two flavors are offered, both exquisitely creamy and dense: chocolate and chocolate walnut, with nuts so crunchy, they seem fresh off a tree. The “factory” sits behind the shop: three sugar-and-chocolate-scented rooms with stainless steel and white enamel surfaces. As two workers in aprons dip marshmallows, another keeps watch over a huge mixer. In other words, everything’s fresh.
