Beacon owners Kazuto Matsusaka and Vivki Fan are behing this fast-but-good-food setup, where just about everything, from the Caesar, veggie, and Cobb salads to the ancho chile chicken wraps, is boxed up and ready to go–although there are a few tables inside and out. Stuffed chicken breast, meat loaf, creamy squares of mac and cheese, and enchiladas can be zapped at home in the microwave. Custom salads are ordered by ticking off ingredients–chicken, edamame, garden lettuces, Nueske’s bacon–on a paper list, sushi style.
