He dotes on vegetables, slicing kohlrabi thinly and dressing it with English peas, cucumber curls, and lime vinaigrette. A grill fueled by coal and wood (logs double as wall decor) puts a flavorful finish on squid with almond milk and sautéed greens as well as on a supremely tender pork collar served atop a “destarched” potato puree. The bar is abuzz for good reason.
