Named for the pig parts that make up its signature dish, Koreatown’s Belly & Snout is not for the meat-shy. Chef-owner Warren Al-meda grew up on home-cooked Filipino meals and “a lot of American fast food.” He admits to the latter with a guiltless glee that’s reflected in the food: all-beef hot dogs, gooey grilled cheeses, and golden tater tots smothered in or filled with garlic crema and an array of authentic Pinoy delights. Top offerings include the porky sisig (ground meat accompanied by fried egg and chicharrónes), peanutty braised oxtail chili, sweet longanisa sausage, and vinegary adobo.
