Orsa & Winston Yakitori Pop-Up

On Nov. 25 and 26, Josef Centeno is busting out the binchotan. The chef and his team will be serving a special of menu of grilled Japanese skewers and other dishes at Downtown hotspot Orsa & Winston.
We’re already salivating after taking a peek at what Centeno and Orsa & Winston’s chef de cuisine Susan Yoon have in store. Expect plenty of riffs on classic Japanese yakitori (grilled chicken skewers), including chicken meatballs with shiso and basil, chicken heart with lardo, chicken breast with Concord grape, yuzu-flavored chicken skin, ume and brown sugar-glazed delicata squash, and guanciale-wrapped chicken liver, among others. For high rollers, guests will also be able to supplement skewers with luxury ingredients like truffles and Piedmontese beef.
There will be non-skewer items on offer as well, including a Satsuki rice soboro bowl, beef carpaccio, house-made testa, mushroom salad and something called “miso-strone,” a tomato and white miso based soup.
And of course, what would yakitori be without beer? Orsa & Winston is bringing in a selection of special European and Japanese beers for the event, including rare selections like a Tokyo Black Porter from Yoho Brewing and Yukidoke IPA from Ryujin Shuzo Co. If sake-based cocktails are more your style, try the Shiba Inu, made with shochu, grapefruit juice, kumquat syrup, and a togarashi salt rim, or the Motha, which combines sake, yogurt and lemon soda. For dessert, try pastry chef Isa Fabro’s tiramasu shaved ice.
Prices are pretty reasonable: a 6-skewer menu with pickles and miso-strone soup will cost $32, while a 10-skewer set will cost you $42. A la carte skewers will be priced from $3.75 to $4.50 each.
