All next month, chef John Sedlar will be transforming his downtown restaurant, Rivera—well, the menu anyway—into a revival of his 1981 Manhattan Beach hit, Saint Estèphe, which helped bring Southwestern cuisine to the forefront. To whet your appetite, take a look at the original Saint Estèphe: the chef (so young!), the dishes (so many sauce squiggles!), and the decor (is that a coyote?). Dig in.
