Peak Season: Spiny Lobsters

The calm waters off Southern California aren’t exactly Deadliest Catch territory, but come fall, they’re full of fishermen taking advantage of spiny lobster season. Our native, clawless crustaceans are even sweeter than the more famous Atlantic lobster and usually cost less. Look for the flapping tails at John Wilson’s booth at the Hollywood Farmers’ Market. Not in a murderous mood? Chefs go nuts for this limited-time critter. “I like to grill or broil spiny lobsters and serve them simply with olive oil and lemon,” says Water Grill’s David Lefevre. “Both ways highlight their toothsome texture and sweet flavor.”
