The salivating began last summer when locals watched as a 300-pound-capacity smoker was unloaded behind the former Glencrest Bar-B-Que. Replacing the time-honored spot is Pork Belly’s, a spiffy sandwich joint that’s betting on Venice’s craving for hardwood-smoked meats. Meatballs are sliced for subs laced with homemade tomato sauce; brisket arrives sauced and chopped, Kansas City style or with gooey cheese in a panino. The Belly Up is a tour de force of dripping sauce, smoky pork belly, and tangy slaw on brioche. Each bite is only improved by nibbling a fried pickle or a sweet potato tot.
