When artist Kristy Baltezore’s neighborhood natural foods market was bought by a company whose ethics she questioned, she needed a new place to stock up. It just so happened she also needed a second source of income. Her company, Rice & Beans, sells bulk organic whole grains, including quinoa, at the Altadena Farmers’ Market. The nutty pearls, which cook up like couscous, come from a tiny Peruvian farm that delivers small batches frequently for freshness. “It gives off this crazy aroma that I haven’t experienced with other quinoa,” she says. By the way, it’s pronounced KEEN-wa.
