Why the Sotto chef has truffles on his mind for our upcoming culinary fest

The 9th annual Los Angeles magazine Food Event takes place on Sunday, October 19, and once again we couldn’t be more proud of the stellar line-up of restaurants. To whet your appetite, we caught up with some of our guest chefs to find out what they’ll be making and what they are most excited to see at the event. Get tickets and more information.

What other restaurant or restaurants are you most looking forward to seeing at the event?
“I’m always looking forward to catching up with old friends: [David] LeFevre, [Ori] Menashe, and I are definitely getting a drink after the event.  It’s always great to see see Don Dickman [chef at Barbrix], especially this year because I’m excited about his new project.”

Have you decided what you will be serving? If not, what do you have to take into account when choosing a dish to serve to over 3,000 people?
“I haven’t finalized my dish but hopefully it will be delicious.  Considering the number of people, it has to be something that is fairly easy to plate but still represents what we do at Sotto.”

What fall ingredient currently has you inspired?
“White truffles!!!  We’ve never used them at Sotto but will be doing so at our ‘Sopra at Sotto‘ event celebrating Piemonte next month.”

Since we’ll all be spending the day in the Malibu hills, which do you prefer mountains or beach?
“Beach!  I’m SoCal through and through.”
