Cooks County, the upcoming Beverly boulevard enterprise brought to you by Claudio and Adria Blotta of Barbrix and starring chefs Dan Mattern and Roxanna Jullapat (both formerly of Ammo) in the kitchen, isn’t open yet. But anxious diners can get a taste of what’s to come tonight at Canélé, where the chefs are popping up in the Atwater Village bistro for their Friends Cook at Canélé event. Corina Weibel’s cozy Eastside spot is known for occasionally opening up its kitchen to pals and regulars who want to take over the cooking duties for a night, but the restaurant has also proven to be a good testing ground for menus in the making. (Consider it the original Test Kitchen.) Short Order’s Nancy Silverton and the late Amy Pressman flipped burgers there last summer (we’re sad to report that the chef and partner in Short Order succumbed to cancer this past Friday), and now we have the Cooks County crew previewing three courses for $35. Canélé doesn’t take reservations, so we’d recommend heading in early.
