Freddy Vargas served as Chef Scott Conant’s right hand man at Scarpetta Beverly Hills when it opened in 2011. Vargas helped the high-end chain achieve critical acclaim until he left the restaurant last spring to head up West Hollywood’s Mercato di Vetro. This spring, Freddy’s back in the kitchen at Scarpetta. Executive Chef Alex Stratta—who only just started at Scarpetta this past January—is taking a personal leave of absence.
Vargas takes Stratta’s place as Executive Chef. For the past few months, he’s been working closely with Conant on the transition and menu development. In a statement, Conant praises Vargas’ work, “We have a great history working together. Not only will Freddy be the chef of Scarpetta here in L.A., but he will also be helping me with other projects.”
