5 Fave Meatless Dishes From the Woman Behind Hollywood’s New Latin Eatery

Meat is so ‘Aughts. That’s what Rachel Carr would say—she’s the plant-focused executive chef at Chavela, the new vegan Latin eatery opening today on Vine. The restaurant—owned by the Rodriguezes of the next-door Los Balcones—will serve Carr’s vegan dishes, which are inspired by Latin America and feature local ingredients. The busy chef, who worked at Cru Restaurant and SunCafe, is a longtime meatless devotee; she was kind enough to share her five favorite plant-based dishes and drinks in L.A., arguably the best place to find vegan cuisine.
