Q: El Cholo has dates next to certain dishes on the menu. Did the chain invent both the Caesar salad and fajitas?
A: It’s food industry semantics. “Those dates are when we started serving them,” says Dawn Schlegel, regional manager of the chain’s L.A. locations, including the Western Avenue flagship, which celebrates its 90th anniversary this year. “We don’t claim to have invented anything.” That doesn’t mean we’re not counting the days until the reinstatement of green corn tamales in May.
