No. 75: Gorge

The dream of two friends who met while learning to cook in Paris, Gorge manages to be at once on the Sunset Strip and off the beaten track. Mexican born and of Lebanese descent, Elia Aboumrad worked with Joël Robuchon (she was his first female sous-chef), and it shows in her smoked oyster mousse crowned with trembling beef gelée. A beer sausage is placed just so atop tart choucroute with a squiggle of mustard. Her teammate, Uyen Nguyen, crafts the restaurant’s sole dessert: a cluster of cream puffs and whipped Chantilly known as a St. Honoré.
