Zach Pollack’s Alimento Opens in Silver Lake

The former Sotto chef debuts his new Italian solo project

Silver Lake’s smoking-hot restaurant scene gains another entrant today with the debut of Alimento, the eagerly anticipated Italian restaurant from Sotto chef Zach Pollack.

Located along Silver Lake Boulevard near L&E Oyster Bar, LA Mill Coffee, and the upcoming Milk Silver Lake, the 40-seat, mid-century-influenced restaurant will serve dishes inspired by “Italy’s regional traditions while not adhering too strictly to them,” according to a press release.

On the menu you’ll find dishes like “pigs in a blanket”—made with a thick slice of mortadella, pickled turnips, stracchinata cheese, and two sheets of spelt pastry—mackerel conserva with wine beans and bottarga, “improved” chopped salad with beef, smoked pork shank with potatoes, cabbage, caraway and speck, and whole roasted snapper with calabrian chili and summer vegetable panzanella.

Pastas will be house-made, naturally, including whole wheat bigoli with summer tomato Fiore Sardo and pine nuts, rye tagliatelle with porcini and veal ragu bianco, and maccheroncini with sautéed chicken livers and Marsala wine.

Also of note is the wine list, which showcases biodynamic wines made from less-common varieties, mostly from Italy but also from Austria, Southern Germany, and California. There’s even an easy-drinking Grüner Veltliner available on draft, if that’s your style.

The restaurant is the first solo project for Pollack, who opened Sotto in 2011 alongside chef Steve Samson. Alimento will open 6 days a week for dinner, Sunday and Tuesday through Thursday, 5:30 p.m. to 10 p.m.; Friday and Saturday, 5:30 p.m. until midnight. Weekend brunch service is also planned for the near future.

    WARNING: They are going to actually charge patrons for water … not special water .. unlimited TAP WATER … water that they are required by law to provide. Eff Zach Pollack. Might be the greediest move I’ve ever seen a restaurant make. I’m a local and sorry man, I will never give this restaurant any of my money. You aren’t that special Zach. Your food isn’t that delicious Zach. Your water isn’t magical Zach. You are the problem Zach.
