This Just In: Fifty Seven Serves On March 27 With David Nayfeld in the Kitchen
This is restaurateur Beau Laughlin’s first foray into fine dining
Chefs bounce from city to city all the time, but when we heard that David Nayfeld, formerly of New York’s esteemed Eleven Madison Park, would be coming to L.A., our ears perked up. Today, Vogue reports that Nayfeld will begin a stint at Fifty Seven, the newest project from Beau Laughlin’s Cardiff Giant group (The Churchill, The Hudson, DBA)—next week.
Inside the old Heinz building in the Arts District, which has a big 57 on the facade, the space is divided between a lower level art and music venue and restaurant concept with a rotating set of chefs. MAI studio, who also designed the interiors for Pedalers Fork and Hinoki & the Bird, is behind the warm woods, copper, and wishbone chairs at Fifty Seven.
Nayfeld is the first of what will be many chefs-in-residence. He’s creating the opening menu, but also trained the cooks who will stay behind after him to lend a hand to the next chef to take this new stage. As Laughlin explained to Vogue, “People in L.A. love constant change and that feeling of loss… With a limited engagement of a concert or play, you’re more likely to go see it and experience it for what it’s worth versus knowing it’s there forever.”
Nayfeld isn’t a natural born Angeleno, but he certainly thinks highly of L.A. He told Vogue about the culinary scene here, “Los Angeles is the most incredible place for chefs to be in the country. This is only the very, very tip of the iceberg. I think in the next five years, L.A. is going to become the most exciting city for eating in the United States.”
