Q&A: Eric Greenspan Talks Grilled Cheese and Jewish Tater Tots

We asked chef Eric Greenspan, who is opening Greenspan’s Grilled Cheese this month: why go gooey?
Two years ago somebody asked me what I’d do beyond the Foundry, and I just said “grilled cheese” on the fly. Then I realized, “Oh! Now I have to do a grilled cheese restaurant!” As it turns out, of all the projects I’ve done, this one has been the most joyful. It’s fun to take the high-end perspective and apply it to something that’s $10 and under.

So will you really be serving only grilled cheese?
There will be eight kinds of grilled cheese sandwiches and one that features a different American artisanal cheese maker each month. American cheeses are some of the best in the world right now, and we don’t get enough credit for it. We’ll also have mini potato pancakes—like Jewish Tater Tots.
