The Vietnamese restaurant aims to show off a world beyond pho. You won’t find the popular soup at dinner, but you will find “phoca-tini”: supple strands of smoked bucatini smothered with five-spice braised oxtail and fresh herbs. Chloe Tran, chef and co-owner of the original East Borough in Costa Mesa, collaborated with Superba chef Jason Neroni to create dishes like charred head-on shrimp with tart pomelo and crab paste butter and crispy daikon rice cakes topped with a poached egg.
