Patina alumnus Bernhard Mai-ringer, a tall, exceptionally Austrian-looking presence, understands how to showcase the foods of his homeland for Angelenos. Schnitzel—made with veal, pork, or turkey—is refined, the coating more draped than crusted around moist meat. A tartare of cured arctic char receives a crown of baby greens.
