The hype has been stifling for the ink-spattered playground of Top Chef winner Michael Voltaggio. Inside the concrete cavern the tattooed star can be seen scattering yogurt curds into a chickpea “poutine” and crumbling coffee-cardamom “soil” over sweet baby turnips. You won’t find the optical-illusion dishes (looks like an egg, tastes like a tomato) that he favored at the Langham Huntington. Instead the focus is on layering flavors, for which Voltaggio shows a devilish gift. Ink. is his first taste of being his own boss, which results in some overambitious stumbles.
