All this week we’re celebrating the debut of our four new Digest blog contributors. Sure, we know about their accomplishments, their publications, and their resumes—but who are these fine foodie folks, reeeeally? We asked each a few probing questions to find out more.

Next up in the hot seat is extreme cuisine expert Eddie Lin:

What’s your favorite restaurant or bar right this minute?

The Corner Door in Culver City. It’s one of those places “where everybody knows your name,” or at least it feels like it. Plus, the Mezcallin is one of the tastiest mezcal drinks in LA. The Braised Pork & Brioche is the best pre-hangover cure money can buy!

Favorite guilty pleasure restaurant?

Waterloo & City. Give me the massive King Platter of house-made charcuterie by chef Brendan Collins and I shall smother myself silly in pig trotters, sweetbreads and salsa verde! This is a plate designed for about four adults but it’s strictly no-share when I order it. Back off!

Your restaurant standby?  

Soup Plantation. Honestly, it’s the best salad bar chain anywhere. It’s all about balance. Plus, there’s not a leaf of kale in the entire place! The mushroom soup (served only on Mondays), rich with earthy mushroom essence, is my favorite.

It’s your last meal on earth—what are you having?

The House Special Supreme Wonton Noodle Soup at Hop Woo BBQ in Chinatown. It has everything but the kitchen sink bobbing about in it, from pork kidney to squid tentacles. Wonton noodle soup is also the first dish I can recall eating with my father in Chinatown.

Default bar drink?

Gin & Tonic. I can drink it all night and not hate myself (or you) the next day.

Any hidden talents?  

I can sing The Muppet Movie’s “Rainbow Connection” while impersonating Harry Connick Jr. as Kermit the Frog.

Coffee or tea?

Coffee, although I know I should be drinking more green tea.

Beer or liquor?

Beer actually gets me drunk quicker so I prefer liquor.

What’s the last thing you ate?

A tongue-and-head burrito from Carnitas Michoacanas in Reseda.

What do you hope to share with us on the Digest blog?

That an adventurous eater is a sexy eater! You need to eat, so why not make it exciting?
