Flautas, A New Project From Chefs Jaime and Ramiro of La Casita Mexicana
Regional Mexican cooking makes its way to the Baldwin Hills Crenshaw Center
It’s a well-known fact that for some of the finest regional Mexican cuisine around, you head to La Casita Mexicana in the city of Bell. There you will find chefs Ramiro Arvizu and Jaime Martin Del Campo working with uncommon ingredients like black corn, epazote, huitlacoche, tamarind chile sauce, or possibly mole blanco made with white raisins and chocolate.
While the business partners are gearing up for their second restaurant, Mexicano, in the Baldwin Hills Crenshaw Center, they’ve also announced the opening of Flautas, a fast-casual concept that will be located inside the center’s food court, adjacent to Mexicano. Both are set to open this fall in October. As you would expect, the restaurant specializes in flautas (“flute” in Spanish), the larger cousins of taquitos which use flour tortillas instead of corn.
“You don’t encounter flautas very often in Los Angeles,” says Del Campo. “Ramiro and I have such fond memories of cooking and eating them while growing up in Jalisco, and we wanted to share that experience.”
To no one’s surprise, the menu is decadent: potato and homemade chorizo flautas topped with guajillo chile and chile de arbol sauce; poblano chile and cheese flautas filled with crema and tomatillo sauce; fish flautas with chipotle chile; and cochinita pibil with achiote. You’ll be able to wash these down with either fresh aquas frescas or lemonade with chia seeds.
