Event Alert: A Modern Filipino Dinner
Chef Andre Guerrero riffs on Filipino classics next week.
What: Bet you didn’t know it was Filipino American History Month. That’s just one more reason for why Filipino food deserves more attention. Nuanced and with Chinese and Spanish influences, it’s a soulful cuisine. To celebrate his heritage cuisine and commemorate Filipino American History Month, chef Andre Guerrero will showcase six elegant takes on classic Filipino dishes at his restaurant Maximiliano in Highland Park.
Kinilaw – yellowtail marinated in homemade vinegar and calamansi with crispy rice cake
Lumpiang Shanghai – shrimp and pork spring roll
Guinataan – kabocha squash and shrimp stew with coconut milk, ginger and salted shrimp paste
Chicken Adobo – sous vide chicken, crispy skin, garlic rice, salted duck egg, pico de gallo
Lechon – “porchetta style” with traditional liver sauce
Ube Flan – purple yam ﬂan with young coconut panna cotta

How: Reservations must be made in advance through Culinary Escort. The dinner is $75 per person; wine pairings are an additional $20 per person.
