For our May issue (on newsstands now!), we rallied our appetites to come up with our list of “The 75 Best Restaurants in L.A.” What were those extra little somethings that helped each spot rise above the rest? Here, we showcase the X-Factors.

Don’t get us wrong, Michael Cimarusti’s Connie & Ted’s is a seafood joint. But you gotta give props to a fish shack that puts out one of the best burgers in the city—especially when that city happens to be L.A. There’s an ode to Wendy’s in the drippy beast, with a house-baked square bun (we know, Wendy squares the patty) and the whole package oozes ribbons of sharp Hook cheddar. The patty itself is made with aged beef and arrives rosy pink and glistening. The skin-on, piping hot, not-too-salty fries? Those are just overkill.
