The crunchy, dry crémant has laser-beam acidity—just the thing for clearing cobwebs in preparation for the new year. Crémant is the term for a wine that undergoes the same process as champagne but is from outside the Champagne region. This one is from France’s Jura, near Burgundy, a place that clings to its traditions and grape varieties. The wine is made from chardonnay grapes, and to judge from the purity, the Buronfosse family not only farms organically, but it also uses a native yeast. As with any good champagne, the wine has rested for 18 months on the yeast, which yields a depth of flavor and tiny, tight bubbles.

Food pairing: Cornmeal- and herb-dusted buffalo oyster mushrooms at Elf Cafe in Echo Park.
