Chef Changes at Dog Haus, Rascal, and The Doughroom

→ IN: Bruce Kalman, who has been working hard on a pickle project since leaving The Churchill in Beverly Grove, has taken on the position of Culinary Director at local chain Dog Haus. He will continue making premium pickles, but is also now involved in new menu development and helping the gourmet hot dog company expand.

← OUT: Early reviews were mostly promising when The Doughroom opened earlier this year, but now Eater L.A. is reporting that chefs D.J. Olsen and Eddie Hah have both departed the Palms eatery. No word yet on a replacement or where Olsen and Hah are headed.

→ IN: Representatives for Rascal, a Mid-City happy hour favorite write in to let us know that chef Andy Lee is now responsible for the restaurant's menu. After graduating from CSCA in Pasadena, Lee worked with chefs at Café Pinot, Wilshire, Rustic Canyon, the Lazy Ox Canteen, and Café Del Rey. His menu includes new standards like fried chicken and gravy, roasted cauliflower and farro, and a roasted pork French dip.

← OUT: Last month, chef Anthony Zappola left The Royce Wood-Fired Steakhouse at The Langham in Pasadena. Taking his place as chef de cuisine is former sous chef Perry Pollaci.
