What: Cacao, or its derivatives cocoa butter and cocoa powder, is popularly known as the main ingredient in chocolate. While people think of chocolate as a dessert, in its raw form, cacao pairs well with savory foods. Next month, Chocovivo partners with chef Kevin Meehan of Kali Dining to prepare a 5-course collaborative dinner highlighting cacao's versatility from savory to sweet. Here's a peek at the menu (which includes a dish featuring fois gras!):
Foie Gras / Cacao Pulp / Bitter Chocolate Gel / Persimmon
Hamachi Sashimi / Cacao Nibs / Pomegranate Seeds / Celery / Fennel
Venison Carpaccio / Roasted Squash / Cacao Oil / Smoke
Braised Pork Cheek / Chocolate Mole Sauce / Chestnut Ravioli
Chocolate Brick / Marcona Almonds / Cacao Soil / Vanilla Gelato
When: Saturday and Sunday, November 1-3, 7 p.m.
Where: Chocovivo, 12469 Washington Blvd., Culver City.
How: The dinner is $95 per person, exclusive of beverages and gratuity. BYOB. Reservations may be made online.
