The mobile offshoot of L.A.'s farm-to-plate catering company Heirloom-LA is more of a culinary shrine than a restaurant on axles. Matthew Poley, former head chef at Michael's, in Long Beach's Naples, is now behind the wheel of this roving operation. His rotating menus are ambitious, featuring such fare as lamb chops with potatoes and greens and shrimp and vegetable fritters with spicy aioli or peanut sauce. What draws the crowds, though, are the lasagna cupcakes—tender squares of al dente noodles layered between braised short rib and cipollini, butternut squash lacquered with brown butter, and garlicky bits of artichoke confit.
