At traditional cowboy bars, the ramrod-straight dancers doing the two-step are silver-haired gentlemen and their full-skirted wives. Not so at the cordial, barnlike Cowboy Country . On Friday nights the scent of shampoo permeates the air as twentysomething girls in stilettos line-dance beside checked-shirted rodeo dudes. On Saturdays, couples in blue jeans take the floor, displaying precision turns. With bands on Wednesdays and weekends, free dance lessons, and a second floor offering pool tables and a bird’s-eye view of the action, you can easily imagine you’re in Texas—and learn to move like it, too.
