Not only does it have "party" in its name, but the Original Barrio Fiesta of Manila, an explosion of color and Christmas lights, is visually loud. The food speaks with the crunch of bubbly skin from the pata (deep-fried pork hock). The quieter kare-kare, a peanut buttery stew of oxtail and vegetables, is rich and demands piles of rice.
