Nobody has been on L.A.’s cutting edge longer than Allen and Richard Wattenberg. Their shop, Ross Cutlery & Sharpening Service, has been downtown in the landmark Bradbury Building for almost a century, and the Wattenbergs have owned and operated the place since 1964. Cooks relish the selection from renowned makers like J.A. Henckels and F. Dick; handy outdoor types spend hours perusing the cabinets filled with thousands of penknives, pocketknives, buck knives, Swiss Army knives, and little key chain jobbies that cut through anything but weigh nothing. Most dramatic, however, are the collectibles: swords, daggers, and wicked-looking ceremonial knives that only a Klingon would know how to use.
