A dish that incorporates all manner of fermented vegetables, kimchi can now be found kicking up grilled cheese sandwiches or garnishing tacos à la Kogi. Situated in the heart of K-Town, Kae Sung Market stocks a constellation of kimchi to go, but it's the jar of sliced Chinese cabbage that takes top honors. Hand packed by owner Sook Jae Cho since 1989, the funky compound strikes a balance of heat, garlic, and effervescence while sacrificing none of the cabbage's crispness. Ginger, radish, carrot, and green onion complement the recipe; salted baby shrimp deliver an umami punch.
