It's all about doubling down; when done right, the twice-fried treats shouldn't betray a hint of sogginess. While Wurstküche's taters are thick and substantial, the Belgian fries to beat come from Flanders Frites. The takeout stand, at Grand Central Market, sends out slivers of potato that are smaller, crisper, and downright irresistible.
