The more than 200 offerings range from the malty Dutch precursor, genever, to juniper-forward London Drys to New World botanical bombs that incorporate everything from purple shamrock to saffron. “It ain’t your grandma’s gin,” says bar manager Tobias Jelinek. But if you order the “Rare Gins” flight (one of four flights available), you’ll taste Old Lady’s, a discontinued ’70s brand made in England.
