[a free diver’s buried treasure]
Fresh sea urchin tastes distinctly of cool depths and dark salt water. The quivering orange lobes of uni (they’re the gonads—sorry) are a delicacy in the Mediterranean and Japan. Our shores are a hotbed for the spiky jewels, and Uni Jack knows just where to find them. [See Fig. 10.]
