L.A.’s just not a sourdough town. “I remember as a young baker wanting to learn more about sourdough and having no place to,” says Cooks County’s Roxana Jullapat. But while we aren’t rich in official levain, we have plenty of slow-rise breads with a sour tang that will do the job. Our new favorite can be found at Storefront in Los Feliz, a deli from the Salt’s Cure team. Pete Scherer cultivated his own starter and lets his dough proof for 14 to 16 hours.
