Yes, there’s Hawaiian poke at Costco. But at this South Bay shack, the recipe for the Aloha State’s favorite snack has been thoroughly vetted by co-owner Stefanie Honda’s island-dwelling relatives. For the Original, cubes of high-grade tuna are tossed with scallion, onion, tomato, and fresh ogo seaweed. In typical mainlander fashion, Honda riffs on the classic, offering half a dozen novel variations: The Cal Roll is dressed with avocado, cucumber, and imitation crab; the Wasabi’s heat is amped up by throat-torching serrano chiles.
