Every Single Dessert at the New Rockenwagner Cafe
Putting the spotlight on pastry chef Cesar Bermudez
Hans Rockenwagner has long been one of L.A.’s most revered bakers, and while his wholesale and farmers’ market stall businesses continue to thrive, Rockenwagner is setting his sights now on the future of his retail and cafe business. Next week, he opens Cafe Rockenwagner in Brentwood. New to this location—and soon to launch at Rockenwagner’s 3 Square in Venice and Rockenwagner Bakery in Santa Monica and Mar Vista—are a fine set of desserts from pastry chef Cesar Bermudez, recently of Flores and The Bazaar by José Andrés. Though Bermudez trained in his native Spain with the esteemed Ferran Adrià at elBulli, the desserts he’s bringing to Rockenwagner are rooted in French technique. Along with a menu of seasonal bistro fare to be served for breakfast, lunch, and dinner, a total of 11 pastries by Bermudez make their official debut at Cafe Rockenwagner when it opens next Monday, January 27.
